  • 2 tаblеѕрооnѕ Rosemary finely chopped 
  • 1 tablespoon thуmе fіnеlу сhорреd 
  • 1/2 tеаѕрооn Pерреr 
  • Sаlt to tаѕtе 

INSTRUCTIONS;
  1. Base;
  2. Preheat oven to 180C/355F.
  3. In a mixing bowl, place the almond flour.
  4. Add the cream cheese and butter and rub into the almond flour until the mixture resembles crumbs.
  5. Add the heavy cream and gently mix together.
  6. Press into the base of a 9.5in quiche dish.
  7. Bake in the oven for 10-12 minutes, until the base is cooked through, but still pale. Set aside while you make the filling.
  8. Filling;
  9. Add the feta cheese and ricotta cheese to your food processor and blend on medium speed until combined.
  10. Add the eggs, cream, rosemary, thyme and pepper and blend until smooth.
  11. Add the Gruyere and pulse until just mixed through.
  12. Pour the mixture into the base and smooth out.
  13. Bake for 20-25 minutes.

Crust;
  • 2¼ tsp fast acting yeast
  • ⅔ cup warm water
  • 1 cup all-purpose flour
  • ⅔ cup whole wheat flour
  • ½ teaspoon salt
  • 2 tablespoons olive oil
Topping;
  • 1 medium eggplant, sliced ¼" thick
  • ½ red onion, thinly sliced
  • 2-3 cloves garlic, minced
  • ½ cup vegan mozzarella cheese, I used Diaya
  • 3-4 tbsp olive oil, divided
  • 1 tbsp fresh rosemary, minced
  • salt

Instructions;
  1. To make the crust
  2. Combine yeast and warm water and set aside. Mix together flours and salt in a large bowl. Add olive oil and mix. While mixing, slowly add water/yeast mixture.
  3. Turn onto a floured surface and knead for 5 minutes. Place in a large oiled bowl, cover with a damp towel, and place in a warm area for 1 - 1½ hours, until doubled in size.
  4. Once dough is ready you can begin preparing everything else.
  5. To make the toppings
  6. Turn the oven to broil and move an oven rack to the top shelf. Slice the eggplant ¼ inch thick and place on a parchment-lined baking sheet. Lightly brush each side with olive oil and sprinkle with salt. Broil for 4-6 minutes on each side, until lightly golden. Remove from oven and let cool.

No Bake Lemon Truffle Ball Recipe

INGREDIENTS;
  • 1 package whіtе сhосоlаtе сhірѕ 
  • 1 tsp. ѕhоrtеnіng 
  • ½ tѕр. lemon zеѕt 
  • Yеllоw ѕрrіnklеѕ 
  • 1 15оz Lеmоn Crеmе Oreo Pасkаgе 
  • 8 оz сrеаm cheese, softened 

INSTRUCTIONS;
  1. Place the lemon Oreos inside of a food processor and crush them. If you don't have a food processor you can place the Oreos in a plastic bag and crush them rolling up and down with a rolling pin.
  2. Put aside 2 tablespoons of crushed cookies aside for decorating the truffles later.
  3. Use a grater to grate the skin of the lemon and put aside the lemon zest.
  4. Mix cream cheese with crushed Oreos in a bowl until both ingredients are completely combined. 
  5. Add zest to the cookie mixture and mix some more.
  6. Line a cookie sheet with parchment or wax paper. Shape the cookie mixture into 1 inch balls and place on lined cookie sheet.
  7. Place cookie sheet in the refrigerator for about an hour or in the freezer for 20 minutes. Don't skip this step because you want the cookie balls firm since it will be a lot easier to chocolate coat them later.

  3. Stir in the wet ingredients until well combined and the texture is runny but thick.
  4. Ladle approximately 1/4 cup of the batter onto the dry pan and cook for 20-30 seconds (or when bubbles start to form on top) before carefully flipping onto the other side. Cook for another 20-30 seconds.

INGREDIENTS:
  • For the Cheesecake Crust:
  • 8 whole graham crackers, broken into pieces
  • 1 tablespoon granulated sugar
  • 5 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 40 ounces cream cheese, at room temperature and cut into 1-inch pieces
  • 1½ cups granulated sugar, divided
  • ⅛ teaspoon salt
  • ⅓ cup sour cream
  • 2 teaspoons lemon juice
  • 2 teaspoons vanilla extract
  • 2 egg yolks
  • 6 eggs
  • 1 tablespoon unsalted butter, melted
  • For the Fresh Strawberry Topping:
  • 2 pounds strawberries, hulled and cut into ¼-inch slices (about 3 cups sliced strawberries)
  • ½ cup granulated sugar
  • Pinch of salt
  • 1 cup strawberry jam
  • 2 tablespoons lemon juice

INSTRUCTIONS;
  • Make the Cheesecake Crust: Adjust oven rack to lower-middle position and preheat oven to 300 degrees F. 
  • By hand or using a food processor, crush the graham crackers into fine crumbs. In a medium bowl stir together the graham cracker crumbs and sugar.

INGREDIENTS;
Red Velvet Sponge:
  • 4 eggs
  • 3/4 cup superfine sugar
  • 1 tablespoon vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla extract
  • 1 ounce (2 tablespoons) red food coloring
  • 3/4 cup cake flour, sifted
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
DIRECTIONS:
  1. Preheat the oven to 350°F. Grease a jelly roll pan with shortening. Line the pan with parchment paper and grease the paper also.
  2. Place the eggs in a stand mixer fitted with the whisk attachment, and with a timer set, beat for 5 minutes.
  3. Slowly add the sugar and oil. Beat well. Add the buttermilk, vinegar, vanilla, and red food coloring. Switch to the paddle attachment.
  4. Sift together the flour, cocoa powder, baking powder, and salt, and slowly add to the liquid ingredients. Beat for 2 minutes, until well combined. The batter will be very thin.
  5. Pour the batter into the prepared jelly roll pan and bake for 12 to 15 minutes. When done, the cake should spring back when touched in the center.
  6. Allow cake to cool in the pan.  Use a 3” round cookie cutter or pastry ring to cut 12 circles from the red velvet sponge.

Whipped Filling;
  • 2 cups heavy whipping cream
  • 4 oz. cream cheese softened
  • 1/3 cup granulated sugar
  • Place cream cheese in the bowl of a stand mixer fitted with the paddle attachment and whip until fluffy.  
  • Pour in heavy whipping cream and beat on medium high speed. Gradually add sugar with the mixture running, until stiff peaks are formed.  
  • Scrape down bowl with a rubber spatula and mix again, making sure mixture is completely incorporated 
Assembly;
  1. 6 gold chocolate buttons or other metallic dragees
  2. 6 squares of quality chocolate such as Godiva, Vosages or Lindor/Lindt
  3. Special equipment -
  4. Piping bag fitted with large star decorator tip, or a zip-top bag with the corner snipped
  5. 6 pastry rings *optional
  6. Place pastry rings on a large baking sheet, if using. Place one round of cake at the bottom of the rings and spoon in 1/4 cup whipped filling.  Top with second cake round.  Alternatively you may use a piping bag and decorator tip to pipe about 1/4 cup of filling on one cake round, and then sandwich with a second.  Cover cakes and refrigerate for 2 hours.  Transfer remaining filling into a piping bag fitted with star tip.
  7. Gently press the cakes out of the mold. Pipe a decorative swirl on the top cake and garnish with gold button or dragee and chocolate square.

INGREDIENTS;
  • 1/4 cup Unsweetened Cocoa Powder
  • 2 tbsp Coconut flour
  • 3 large eggs (room temperature)
  • 12 tbsp Butter
  • 1/2 cup erythritol
  • 1/2 tsp vanilla extract
  • Pink Salt
  • 2 oz Unsweetened Bakers Chocolate

INSTRUCTIONS;
  1. Preheat oven to 325 degrees
  2. Combine coco powder, coconut flour, and salt, and set aside
  3. Add eyrthritol, eggs, vanilla and mix with a hand mixer. Mix until the volume of the mixture has tripled in size. This should take about 3-5 minutes on high.
  4. In a 3rd bowl, melt together butter and bakers chocolate. This can be done using a double boiler method, or by repeatedly microwaving for 20s and mixing. If using the microwave be careful not to burn the chocolate.
  5. Add egg mixture to the butter/chocolate mixture in 3 parts, folding in each time. Most of the erythritol will be at the bottom of the egg mixture, thats ok!
  6. Once the wet ingredients are all combined, begin adding the dry ingredients. Add 1/3 of the dry mixture and fold into the wet. Repeat this process 3 times until all of the dry mixture is used and a homogeneous brownie batter is formed.
  7. Pour into a greased 8x4 loaf pan.
  8. Place into a 325 degree oven for 50-55 minutes.

INGREDIENTS;
For the Cake;
  • 1 3/4 cups all-purpose gluten free flour
  • 3/4 teaspoon xanthan gum (omit if your blend contains it)
  • 2 cups granulated sugar
  • 3/4 cups cocoa powder*
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 cup buttermilk (or 1 cup unsweetened coconut milk + 1 tablespoon white vinegar)
  • 1/2 cup avocado oil (or canola oil)
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup hot coffee
For the Frosting;
  • 1 cup butter, softened
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy whipping cream

INSTRUCTIONS;
To make the Cake;
  1. Preheat oven to 350 degrees and spray 2 8-inch cake pans with non-stick spray. 
  2. Line the bottom of the pans with parchment paper and spray that parchment paper with non-stick spray.
  3. In the bowl of a stand mixer, sift together the flour, xanthan gum, sugar, cocoa powder, baking soda, baking powder and salt. 
  4. Use the paddle attachment to mix the dry ingredients on low speed.
  5. In a separate bowl, whisk together the eggs, buttermilk, oil and vanilla.
  6. With the mixer running on low speed, slowly pour the wet ingredients into the dry ingredients. Mix until completely combined.
  7. Scrape down the sides and bottom of the bowl and pour in the hot coffee. Mix on low until incorporated.
