Ginger Chicken with Noodles

Ginger chicken with noodles. This delicious chicken recipe belongs to Thai cuisine.

Makes 4 servings

  • 2 tablespoons vegetable oil
  • 1 yellow onion,peeled and sliced
  • 2 garlic cloves,peeled and finely chopped
  • fresh ginger,thinly sliced
  • 4 skinless and boneless chicken breasts,cubed
  • 1 1/4 cups (310 ml) chicken stock
  • 4 tablespoons Thai soy sauce
  • 2 3/4 oz (75 g) flat rice noodles
  • 4 scallions,chopped
  • fresh cilantro,to garnish

Cooking method;
  1. Heat vegetable oil in a wok.
  2. Add onion,garlic and ginger.Stir-fry for 1-2 minutes,until softened.
  3. Add cubed chicken and fry,stirring occasionally,for a further 3-4 minutes,until chicken is cooked through and lightly browned.
  4. Stir in chicken stock and soy sauce.Bring to a boil over medium-high heat.
  5. Reduce heat to low and simmer for 2-3 minutes.
  6. Meanwhile soak the noodles in boiling water for 6-8 minutes.Drain well.
  7. Garnish with chopped scallions and fresh cilantro.
  8. Serve immediately.
