Vegan Eggplant Meatballs (Oil-free) #Dinner #eggplantmeatballs

These eggplant meatballs are without oil, low in fat, and pressed with plant-protein! A generous and appetizing flavor-blast flawless to awe a group :)

INGREDIENTS;

1 chia egg (1 tablespoon chia seeds + 3 tablespoons water)
1 1/3 cups white onion, diced
1 rib celery, diced small (about 1/3 cup, optional)
2 cloves garlic, minced
2 unpeeled Italian eggplants, diced into about 1/2-1″ cubes (about 10.5-11 cups diced)*
1 cup cooked garbanzo beans (chickpeas)
1/3 cup parsley, chopped and loosely packed
1/4 cup tempeh bacon (homemade or storebought such as Light Life)*
1/4 cup quick oats
1/4 cup chopped fresh basil
1 cup plain breadcrumbs
1/4 cup nutritional yeast
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon liquid smoke (optional but recommended)
1/4-1/3 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2-3/4 cups vegetable broth, as needed

To serve;

Spaghetti noodles
Marinara of choice (or a raw vegan marinara)

INSTRUCTIONS;

Make the chia egg by mixing the chia seeds and water together in a small bowl, and set aside to thicken for about 15 minutes.
Preheat the oven to 375°F on convection*. Line 2-3 large baking sheet with parchment paper.
Place 1/4 cup vegetable broth or water in a large pan over medium heat. Once heated, add in the onions, garlic, and celery, and cook until translucent, about 3 to 5 minutes (adding more broth as needed to prevent burning). Transfer to a large bowl.
In the same pan, add another 1/2 cup more water or broth with the eggplant. Cook, stirring often, until it is soft, about 10 to 12 minutes. If needed, cook in two batches and add more broth to prevent burning.
Once cooked, add to the large bowl along with the garbanzo beans, parsley, tempeh, oats, and basil. Mix until uniform, then place into a food processor in two batches and pulse until chopped and combined but NOT pureed. If needed, you can pulse and also mash down with a fork later on in the bowl to prevent a pureed consistency.

Today is National Zucchini Day. Yes, there is a special day devoted to the squash. I don’t know who decides on these days, but I am happy to celebrate the zucchini. It really is perfect timing for National Zucchini Day. We are all racking our brains trying to figure out what to do with the vegetable, so why not make a day of it and go zucchini crazy?

I am going to kick-off National Zucchini Day by making Zucchini Coconut Bread. I love zucchini bread and this Zucchini Coconut Bread is my new favorite zucchini bread recipe. I’ve already made it three times this summer. It is a great recipe for using up the summer zucchini!

This bread is easy to whip up and is on the healthier spectrum of zucchini breads. The bread is made with whole wheat flour, Greek yogurt, and coconut oil. There is no butter in this bread! Don’t worry, you won’t miss it. The coconut oil gives the bread an incredible flavor. The bread is also super moist thanks to the zucchini and Greek yogurt. The shredded coconut compliments the zucchini nicely and adds a little extra coconut goodness to the loaf.

Shred up some zucchini and make Zucchini Coconut Bread! It is the perfect way to celebrate National Zucchini Day. You can’t beat a warm slice of zucchini bread! Mmmm!

INGREDIENTS;

1/2 cup brown sugar
1/4 cup granulated sugar
1/4 cup coconut oil, melted
1/2 cup plain Greek yogurt, at room temperature
1 large egg, at room temperature
1 teaspoon vanilla extract
1 cup shredded sweetened coconut
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups shredded zucchini (squeezed and drained in a paper towel)

INSTRUCTIONS;

Preheat the oven to 350 degrees F. Grease a 9×5 inch loaf pan and set aside.
In a large bowl, whisk together flours, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
In a separate large bowl, combine shredded zucchini, sugars, coconut oil, yogurt, egg, and vanilla extract.

Have you ever seen those Red Lobster commercials – you know, the ones for their “endless shrimp” special? They’re kind of hard to miss. Anyway, while I can think of about a million things I’d rather have an endless supply of than cute little crustaceans, I was intrigued by their idea of tossing protein in flaky coconut and frying it to crispy perfection.

What better way to make this tropical dish vegan than with tofu, and what better time to do it than now – when we’re all freezing our buns off waiting for the first signs of spring? I love any excuse to experiment with fun flavors and cooking techniques, so I wasted no time testing my idea. Complete with a savory marinade and a sweet and spicy coconut cream sauce, this satisfying main tastes just like a beach vacation. And couldn’t we all use one of those right about now?

If you’re seeking relief from this never-ending winter, treat your taste buds to the tropical flavors of coconut and pineapple, cut with a sweet and (not too) spicy chili sauce. Spring is just around the corner, and this is just the dish to tide you over until the sun comes out to thaw your frozen bones. I suggest pairing the tofu with our Kung Pao Brussels Sprouts and a frosty piña colada for the ultimate experience.

Ingredients;

For the Coconut Crusted Tofu;

14 ounces extra-firm tofu
1/4 cup soy sauce
1/4 cup coconut sugar
1 small lime, juiced
1/2 tablespoon fresh ginger, grated
2 tablespoons whole wheat flour
2 tablespoons cornstarch
1/4 teaspoon baking powder
3 tablespoons cold water
1/2 cup panko breadcrumbs
3/4 cup shredded coconut (sweetened or unsweetened)
1/4 cup vegetable or canola oil, for frying

For the Sweet Chili Sauce;

1/2 cup coconut cream (from a 15-oz. can of full-fat coconut milk)
2 tablespoons pineapple juice
2 teaspoons lime juice
1 teaspoon chili garlic sauce

Instructions;

Press the tofu with several layers of paper towel to remove as much water as possible. Cut the tofu into ½-inch slabs and press with paper towels again.
To prepare the marinade, first combine the soy sauce and coconut sugar in a small mixing bowl. Microwave in 15-second intervals, stirring in between, until the coconut sugar dissolves. This should take less than a minute.
Add the lime juice and fresh ginger. Whisk to combine.
Transfer the tofu to a shallow baking dish and pour in the marinade. Move the pieces around so each is completely coated. Cover and place in the fridge for at least two hours, flipping the pieces over and recovering with the marinade half way through. Put your can of coconut milk in the refrigerator at this time, too.
While the tofu is marinating, prepare the batter. Combine the flour, cornstarch, baking powder and water in a medium mixing bowl. Whisk to combine. Set in the fridge until you’re ready to cook the tofu.

This pumpkin pie uses a pretty basic graham cracker crumb crust with some pumpkin spices mixed in, though you could easily add some cocoa powder to the crust to get a fourth form of chocolate into the mix. The first chocolate comes in the form of a layer of bittersweet chocolate on the crust that is topped with the semisweet chocolate pumpkin pie and the final chocolate comes in the form of a milk chocolate drizzle that is added just before serving. This triple chocolate pumpkin pie is pure chocolaty decadence at its best!

Triple Chocolate Pumpkin Pie Recipe

INGREDIENTS;

2 cups graham cracker crumbs (about 16 crackers)
6 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
2 tablespoons packed light-brown sugar
1/2 teaspoon coarse salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginge
r3 ounces bittersweet chocolate (preferably 61 percent cacao), finely chopped
6 ounces semisweet chocolate (preferably 55 percent cacao), chopped
4 tablespoons unsalted butter, cut into small pieces
1 can (15 ounce) solid-pack pumpkin
1 can (12 ounce) evaporated milk
3/4 cup packed light-brown sugar
3 large eggs
1 tablespoon cornstarch
1 teaspoon pure vanilla extract
1 1/2 teaspoons coarse salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 ounce milk chocolate, melted

INSTRUCTIONS;

Mix the graham cracker crumbs, butter, sugars, salt, cinnamon and ginger, press the mixture into the bottom of a 9 inch pie plate and bake in a preheated 350F/180C oven until lightly golden brown, about 8-10 minutes.
Sprinkle the bittersweet chocolate over bottom of crust, return to oven until it melts and spread it in a thin layer over the bottom of the crust.
Melt the semisweet chocolate and butter in a double boiler until smooth and set aside.
Mix the pumpkin, milk, brown sugar, eggs, cornstarch, vanilla, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl.
Mix in 1/3 of the pumpkin mixture into the chocolate and then mix in the rest.
Pour the mixture into the pie plate and bake in a preheated 325F/170C oven until the center is set but still jiggly, about 50-60 minutes.

INSTRUCTIONS;

First, thе day before уоu рlаn tо ѕеrvе уоur bаkе, cut уоur Englіѕh muffіnѕ into сubеѕ. Sрrеаd on a baking ѕhееt аnd broil іn thе oven for a few mіnutеѕ tо brown thеm lіghtlу. Gеnеrоuѕlу butter (2 tаblеѕрооnѕ) a 9x13 саѕѕеrоlе dish аnd spread thе tоаѕtеd Englіѕh muffin сubеѕ іntо thе bottom оf the dіѕh.
Then, hеаt a non-stick ѕkіllеt оvеr medium-high hеаt аnd melt the remaining tаblеѕрооn оf buttеr іn thе ѕkіllеt. Sauté the hаm and grееn onions fоr аbоut 8 mіnutеѕ, ѕtіrrіng occasionally, untіl thе ham is starting tо brоwn.

INSTRUCTIONS;
