Avocado-papaya Salad

Ingredients

  1. 3 avocados
  2. 3 papayas
  3. 3 tablespoon lemon juice
  4. 1 head lettuce
  5. 1/2 cup honey mustard dressing; recipe follows
  6. 1/2 cup toasted sliced almonds
  7. 2/3 cup vegetable oil
  8. 1/3 cup cider vinegar
  9. 1 teaspoon salt
  10. 1/4 teaspoon pepper
  11. 1/4 cup honey
  12. 2 tablespoon dijon-style mustard

Preparation method

  1. Salad: Peel and slice the papayas and avocados. Dip or sprinkle with lemon juice. Arrange on lettuce-lined salad plates. Drizzle dressing over and sprinkle with nuts.
  2. Honey Mustard Dressing: Blend vegetable oil, cider vinegar, salt, pepper, honey and mustard. Keep in a closed jar.
