Avocado-shrimp Aspic

Ingredients

  1. 1 tablespoon gelatin
  2. 2 tablespoon cold water
  3. 1 cup boiling water
  4. 1 cup sieved avocado
  5. 1 1/2 tablespoon lemon juice
  6. 3/4 teaspoon salt
  7. 1 or 2 teaspoon worcestershire sauce
  8. 1 dash tabasco
  9. 1 pimiento, minced
  10. 1 1/2 cup shrimp, cooked and shelled

Preparation method

  1. Soften gelatin in cold water, add boiling water and stir to dissolve.
  2. Add avocado, seasonings and pimiento. Chill until mixture begins to thicken, then add shrimps.
  3. Turn into cold wet mold, chill until firm, and unmold on lettuce.
