Beef and Eggplant Casserole

Ingredients

  1. 1 lb ground beef
  2. 1    onion, chopped
  3. 1 t  crushed Italian Seasonings
  4. 1    eggplant, diced
  5. 1 lb stuffing mix
  6. 1 t  seasoned salt
  7. 1 c  cheddar cheese, grated

Preparation method

  1. Preheat oven to 350 degrees.
  2. In a skillet brown ground beef, chopped onion and Italian Seasonings; drain.
  3. Cook peeled, diced eggplant in water until tender; drain.
  4. In a baking dish, combine the ground beef, the cooked eggplant, stuffing mix, and seasoned salt. Top with grated cheddar cheese and bake for 15 minutes.
