Gingered Pork with Peanut Sauce

Ingredients

  1. 1 lb pork tenderloin
  2. 1    3-ounce package pork-flavored – Oriental noodles
  3. 2 t  vegetable oil
  4. 1/2 t  red pepper flakes
  5. 1 t  grated fresh ginger root
  6. 1/4 c  peanut butter
  7. 2 T  soy sauce
  8. 2 c  torn spinach, washed and – drained
  9. 1/4 c  sliced green onions

Preparation method

  1. Cut tenderloin into ¼-inch slices, cut each slice in half. Cook noodles as directed on package; drain, reserving cooking water,
  2. and keep warm.
  3. Heat oil in a heavy skillet over high heat; add pork, red pepper flakes and ginger. Cook and stir until pork is done, about 4-5 minutes. Remove pork and keep warm.
  4. Blend peanut butter, ½ cup reserved cooking water and soy sauce; heat and stir until hot, adding more cooking water, if needed.
  5. Toss cooked pork, noodles, spinach and green onions with peanut sauce.

Note: A complete meal, this skillet dish features stir-fried Thai-seasoned pork tenderloin pieces, popular Ramen noodles, and fresh
spinach. Add only fresh fruit to the menu.
