Grated lemon peel for cakes

Many of you have asked me how I prepare the grated lemon peel that I use in cakes & co, so I started doing something about your request, using the related pictures and nicely describing the process step by step – not that it would be difficult, but only to make sure you understand how it’s done. I learned how to prepare the grated lemon peel from one of my grandma’s recipes. She prepared it this way since I was a kid and I started using this recipe because I find it very useful, never knowing when that sweet tooth comes up. Preparing grated lemon peel this way, its flavor being stronger, it will add some extra savor to your cakes, being unable to compare to the taste of simple grated lemon peel.

We need:
- 4-5 lemons;
- sugar as needed;
- a clean jar.

We finely grate the lemons or we use the special instrument for lemon peel. I prefer grating them because it’s much faster. Okay! Now we take the clean jar and layer some grated lemon peel, about two-three teaspoons, which we press well. Next we layer some sugar and some grated lemon peel over it. We repeat this process until we finish the ingredients and then we put the jar in the fridge, using when needed.

With the help of this simple recipe, you’ll obtain delicious grated lemon peel, which can be

also eaten as it is, not only used in cakes. After a couple of days in the fridge, the grated lemon peel will caramelize itself and have an absolutely insane flavor! Try it at least once, and I promise you won’t regret it!

You can do the same with orange peel. Even mixing them together is fine, one layer of grated lemon peel, one layer of sugar, another layer of grated orange peel and a layer of cinnamon. Such a mix is great in cookies, cakes or winter muffins, especially in those with apples.
