Nifty Nachos
Ingredients
1 onion, peeled and finely chopped
1 Tbsp oil
425g can Spicy Mexican Beans
3 medium sized tomatoes, diced
340g can Corned Beef
Topping
1 avocado, halved and stoned
1 spring onion, trimmed and sliced
1 Tbsp chopped fresh coriander or parsley
juice of one lemon
sour cream
Preparation method
1. Cook the onion in the oil in a large frying pan for 4-5 minutes until tender.
2. Add the Spicy Mexican Beans and tomatoes and simmer gently for 5 minutes.
3. Dice the Corned Beef , add to the beans and heat through, stirring regularly.
4. Dice the avocado and mix with the spring onion, coriander or parsley and lemon juice.
5. Arrange 1 packet of your favourite nachos on a serving plate. Cover with the beans sauce. Top with the avocado topping and sour cream.
