Stuffed Lamb Chops

Ingredients

  1. 4 tablespoon lamb chops, thick
  2. 4 tablespoon butter
  3. 1 each garlic clove, minced
  4. 2 tablespoon parsley, chopped
  5. 1 dash salt
  6. 1 dash pepper

Preparation method

  1. Make a pocket in the thickest part of the chop. Cream remaining ingredients, add salt and pepper to taste.
  2. Insert mixture in pocket; secure chops with tooth picks. Broil 8 minutes for rare, 14 minutes for medium rare, 18 minutes for medium.
  3. Variations: Omit parsley, add tarragon or rosemary.
