Tangy Beef Barbecue

    Ingredients

    1. 1 lb beef top round steak, cut – 3/4 inch thick
    2. 1    medium onion, thinly sliced – and separated into rings
    3. 1/3 c  catsup
    4. 2 T  packed brown sugar
    5. 1 T  cider vinegar
    6. 1 t  cornstarch
    7. 1 t  dry mustard
    8. 1 t  hot pepper sauce
    9. 1/2 t  salt
    10. 4    corn muffins, quartered

    Preparation method

    1. Cut beef top round steak into 1/8-inch strips.
    2. Place onions in single layer over bottom of 11-3/4X7-1/2-inch microwave-safe dish. Cover with waxed paper; microwave at high 2 minutes.
    3. Arrange beef strips over onions. Microwave, covered, at medium 5 minutes. Pour off drippings.
    4. Meanwhile, combine catsup, brown sugar, vinegar, cornstarch, dry mustard, hot pepper sauce and salt, mixing thoroughly. Stir into beef mixture; microwave, covered, at medium 8 minutes, stirring after 4 minutes.
    5. Arrange muffins on 4 individual plates. Stir beef mixture; spoon an equal portion over each muffin
