Turkey Skillet Supper

    Ingredients

    1. 1 T  olive oil
    2. 2    cloves fresh garlic minced
    3. 1 T  fresh lemon juice
    4. 1/4 t  salt
    5. 1/2 t  dried oregano
    6. 1 T  olive oil
    7. 12 oz cooked turkey, cut into – strips
    8. 4 c  fresh spinach washed, dried – and torn
    9. 8 oz fusilli pasta cooked and – drained
    10. 2 c  cherry tomatoes halved
    11. 2 oz Feta cheese crumbled
    12. As needed black olives – drained and pitted

    Preparation method

    1. To prepare the dressing, combine 1 tablespoon oil, garlic, lemon juice, salt and oregano.
    2. Heat oil in skillet. Stir-fry cooked turkey until golden brown. Season with salt and pepper.
    3. Add spinach; cover and steam until spinach is wilted. Combine remaining ingredients, including dressing, in a large bowl and toss.
    4. Add pasta mixture to turkey and stir to combine. Garnish with black olives, if desired.
