Tuscan Turkey and Pasta Toss

Ingredients

  1. 1 lb smoked turkey cut into – 1/2-inch cubes
  2. 16 oz 1 jar salsa or picante sauce
  3. 15-1/4 oz 1 can shoepeg white corn – drained
  4. 1/4 c  sun-dried tomatoes in oil; – drained, oil reserved, – chopped
  5. 1/4 c  green onion chopped
  6. 1 T  lime juice
  7. 1 t  sugar
  8. 1 t  garlic minced
  9. 1 12 oz package linguine cooked – according to package – directions
  10. 3/4 c  reduced-fat Monterey Jack – cheese shredded
  11. 3 T  fresh cilantro chopped

Preparation method

  1. In 3-quart saucepan, over high heat, combine turkey, salsa, corn, tomatoes, onions, lime juice, sugar, garlic, and 1 teaspoon reserved oil. Bring to boil, reduce heat and simmer 5 to 10 minutes or until heated throughout.
  2. To serve, spoon mixture over linguine and sprinkle with cheese and cilantro.
