White Bean and Pesto Sub

Ingredients

  1. 1 16-oz loaf of French bread, split
  2. 1/4 cup of Basil Pesto Sauce
  3. Leaf lettuce (optional)
  4. 12 oz. canned white beans
  5. 1 large tomato, thinly sliced
  6. 1 cup alfalfa sprouts

Preparation method

  1. Puree white beans. Spread bottom half of bread with Pesto Sauce.
  2. Layer with lettuce, white bean spread, tomato, and sprouts.  Cover with top half of bread.
  • Yields: 4 servings
